I know, you've seen some pretty good-looking sandwiches so far in this series (plus one entry about veggie dogs), but as the expression goes, "you ain't seen nothin' yet."
Behold, the faux turkey melt sandwich ...

The best part about it? It's idiot-proof. There is no conceivable way to mess it up, and all of the ingredients will only cost you around 10 bucks (and you'll have leftovers!)
Ingredients:
- 2 slices bread
- 1/2 Tbsp. vegan mayo (check your local health food store)
- 4 slices vegan turkey (available at most grocery stores)
- 1/4 avocado, sliced
- 2 Tbsp. shredded vegan Monterey jack cheese (also at the health food store)
Steps:
1) Spread the vegan mayo on one slice of bread.
2) Add the turkey slices, avocado, and the cheese.
3) Place both the dressed bread and the plain bread under a broiler or in a toaster oven until the cheese begins to melt and the bread toasts.
4) Remove from the oven, close the sandwich.
5) Make fun of friends not enjoying this sandwich.
Unbeatable. Unstoppable. Unbelievable.

Let me set the scene: Your school's vegan options suck—between french fries, iceberg lettuce and potato chips, you're getting a little fed up. You're gathering petitions to get more veg options, and talking to your lunch ladies about serving up some real food, but that's all taking a bit of time. What can you do for lunch right now?
peta2's got you covered. Every week we're going to be comin' up with something creative, but easy to put together, find ingredients for, and obviously easy to eat, for you to bring to lunch! These should make for happy stomachs, and good outreach because while your corpse munching friends are digging into their mystery meat, you'll have food that was tested out by vegan food experts. Trust us—we know vegan food!
I'm starting the blog out with some of my favorite things thrown together:

- Tofurky (any variety will do—I love original, and the new "cranberry and stuffing," pictured here!).
- Sesame tahini hummus—OK, if you haven't had hummus yet, and you're veg, get to it! Hummus can go on pretty much anything and make it amazing. Example? This sandwich. It can be a main dish, a side dish, a dip, or a spread. It's essential!
- Mustard, lettuce, sprouts, bread—these are self explanatory. I love mustard, in fact, some have said I have a small obsession. And I love sprouts. If you don't, leave 'em off! Vegan mayo is also an acceptable condiment for this (again, if you don't have vegan mayo in your life, WTF?).

On what other day would it be socially acceptable to eat like you don't plan on living tomorrow, sit and watch parades on TV (no walking required), and celebrate the beginning of the winter holiday season with a tall glass (or eight) of everybody's favorite vegan nog? What a day to be alive...
I'm sure you're all out there enjoying your scrumptious homemade recipes, but I thought I would share some pics from our peta2 feast (you know, to make you jealous and stuff):

If you're anything like me, the thought of having a big, dead, stuffed bird as the centerpiece of your Thanksgiving meal is definitely cringe-inducing—and I'm sure the 300 million turkeys raised and killed for their flesh each year in the US aren't thrilled at the thought, either.
Lucky for you, me, and the turkeys, there are lots of alternatives available, including one of my favorites, Tofurky!
Here are my top five reasons you should eat a Tofurky this year:

- Murder should never be cause for celebration.

This Friday I'm off to Hilton Head Island for some much needed vacation time. Right before any trip I take, I do a lil' research about the vegetarian-friendly restaurants that are going to be there (there is no way I'm going to be stuck with just side salads).
The first thing I do is check out Happy Cow, which is a great resource for finding vegetarian restaurants just about anywhere in the U.S.
The next thing I do is Google the name of the place where I'm going and the word "vegetarian" (i.e. "Hilton Head Island" vegetarian). You will have to do a little scrolling, but you usually find some good resources and reviews.
Another vacation tip is to take a cooler packed with veg snacks. Since I'm staying at a beach house with a kitchen, my cooler is going to be filled with Tofurky brats, Boca burgers, vegan cheese, and tons of fresh fruits and veggies that we'll get at farmers markets on the drive down—yay for Georgia peaches!

Holiday Thanksgiving turkey sanctuary Tofurky
In the summer of 2002, I worked at a farmed animal sanctuary near my hometown in Western Pennsylvania. My day consisted of feeding the animals in the morning, and working on a larger project in the afternoon such as painting the barn a new coat of red, or mending a broken fence.
During my lunch break, one of my own decided duties was to hang out with the rescued turkeys. There was one turkey in particular with whom I took a special liking to. Her name was Darla. Darla had come to the sanctuary after falling off a truck bound for the slaughterhouse. She was quite the lucky turkey indeed.
Darla loved to bask in the sun, search for bugs, investigate what the rabbits were doing in the next enclosure, and eat her favorite treat—grapes. She also loved to be pet. Every time I stroked under her beak, she would fall asleep—sometimes even standing up!
Throughout the summer, I noticed Darla starting to change. She would wheeze when she breathed, and would spend more of her days lying down in the barn.
Darla got worse as the weeks wore on. She was becoming crippled under the weight of her genetically manipulated and drugged body. She was not intended to have lived beyond her date with the slaughterhouse. Her legs were giving out, and her lungs were being crushed by her ever-growing body.
One morning, I came into work and heard that Darla had to be euthanized the night before. I wasn't surprised at the news, because I saw the amount of pain that she was in, and knew her time had come. I was still sad though, and remember her especially during this time of year.
Even if you haven't had the great opportunity to be-friend a turkey, it is clear that they are smart, gentle, and feeling beings that deserve not to be used as a holiday dinner!
So for Darla and all turkeys, go cold turkey this Thanksgiving, and opt for some Tofurky instead!
