peta2's Sandwich of the Week: Breakfast Sandwich November 5, 2009

We have seen some amazing sandwiches but something is missing. The most important meal of the day needs a sandwich and peta2 D.C. is up for the challenge. So I enlisted the help of our lovely interns to make and taste test our sandwich.

Here it is the easy Mexican Fauxwich recipe (Faux as in fake eggs).

Ingredients:

-Vegan English muffins (read the package; you don't want any eggs or dairy)
-Fantastic Brand Tofu Scramble (available at many grocery stores and health food stores)
-14 oz package of extra firm tofu
-Salsa
-Guacamole

Steps:
1) Open the tofu package and drain the water
2) Cut the tofu into half inch cubes (be careful with sharp and pointy things, please)
3) Place tofu cubes in a large bowl; add the seasoning packet and a tablespoon of oil
4) Stir and smash large chunks with a fork
5) Heat the tofu mixture in a pan for about 3 minutes stirring occasionally
6) Slice and toast the English muffins
7) Put some scramble on a toasted English muffin and top with salsa and guacamole
8) Share with friends!

Now you can spice your breakfast sandwich up anyway you like; maybe some spicy peppers or vegan cheese.

peta2's Sandwich of the Week: Peanut Apple Butter Goodness! October 29, 2009

Nope. Neither "apple butter" nor "peanut butter" actually have "butter" made from any animals in them. (In case you were wondering.)

So now that that's out of the way, check out one of Jason's favorite sandwiches to bring for lunch!

All you need is three things: bread, apple butter, and peanut butter! It doesn't matter what brand or variety you use—we're happy as long as you're eating yummy vegan food! Each of these things should be easily available at your local grocery store!



The sandwich you see uses two slices of pumpernickel bread (hint: try toasting the bread!). Then you just need to spread some apple butter on one slice and lots of creamy peanut butter on the other. That's all! You're all set!

I don't know why I never thought of such an easy alternative to peanut butter and jelly, but that's the point of these "sandwich of the week" blogs! We want to give you easy vegan foods to bring to school or work for lunch! Or if you're lazy, you can eat 'em for dinner ... ha!

peta2's Sandwich of the Week: Veggie Dogs October 8, 2009

Listen, I know that veggie dogs aren't really considered "sandwiches," but it's something in between bread, so I think it fits the definition closely enough to make this a sandwich of the week!

So anyway, if you're wondering what to eat and interested in a simple, protein-packed meal why not bring some veggie dogs for lunch?

You probably don't need a recipe or instructions, but to humor you I'll include some anyway ...

Step 1. Buy veggie dogs and bread.
Step 2. The morning before you go to school, cook the veggie dogs according to the instructions on the package. I'm lazy so I microwave them. You might care to boil them or use a fancy pan or indoor grill. Whatever makes you happy, you know?
Step 3. Put the veggie dogs in the buns.
Step 4. Wrap the veggie dogs and buns in aluminum foil. They'll stay warm and fit perfectly in your lunch bag.
Step 5. Go to school and eat! Remember to recycle the foil!



As I mentioned, I can get pretty lazy, so I just swiped some bbq sauce, mustard, and ketchup from the fridge at work for lunch today, but you can mix it up with Chili 'Dogs' or whatever else makes you happy.

It's seriously such a great alternative to the old standard of PB&J, so give it a try for lunch sometime soon. And bring an extra for a friend to try, will ya?

peta2's Sandwich of the Week: Round 2! September 24, 2009

Howdy ladies and gents! Last week Rachel introduced you to one of her favorite sandwiches, and this week it's my turn. Since I grew in a small town in Indiana I like to keep things pretty simple, and this sandwich is pretty much the definition of simple. I want to introduce you to my BLATMmm!

What does BLATMmm stand for you ask? Well, it's faux bacon, lettuce, avocado, tomato, and vegan mozzarella. It's pretty easy to find all of the necessary ingredients for this masterpiece, and it's pretty affordable! Last night I went to my local health food store to pick up some of Lightlife's Smart Bacon and Tofutti's soy mozzarella, but I've noticed that these products are starting to appear in larger super markets if you don't have a health food store near you. Here are some steps of how to prepare such a simple meal:

-Wash the tomato, and cut into slices. I personally like them not too thick, but not too thin.
-Cut the avocado in half.
-Warm up the stove to medium-high heat (or follow the heating instructions on the faux bacon package), and when ready toss the strips onto a skillet for a couple of minutes.
-Toast your favorite kind of bread. I'm a fan of wheat bread and I like it lightly toasted.
-Once the bread is toasted, I like to place a slice of vegan cheese on both pieces of bread. On the bottom piece I put down the avocado on top of the soy cheese, lettuce, and tomato. When the faux bacon is ready, toss the strips on top of the tomato(es)!

That's pretty much it! Since Wednesday nights are usually my movie nights, I invited my friend chocolate soy milk to the party and we enjoyed a flick. Introducing: peta2 Sandwich of the Week! September 17, 2009

Let me set the scene: Your school's vegan options suck—between french fries, iceberg lettuce and potato chips, you're getting a little fed up. You're gathering petitions to get more veg options, and talking to your lunch ladies about serving up some real food, but that's all taking a bit of time. What can you do for lunch right now?

peta2's got you covered. Every week we're going to be comin' up with something creative, but easy to put together, find ingredients for, and obviously easy to eat, for you to bring to lunch! These should make for happy stomachs, and good outreach because while your corpse munching friends are digging into their mystery meat, you'll have food that was tested out by vegan food experts. Trust us—we know vegan food!

I'm starting the blog out with some of my favorite things thrown together:


  • Tofurky (any variety will do—I love original, and the new "cranberry and stuffing," pictured here!).
  • Sesame tahini hummus—OK, if you haven't had hummus yet, and you're veg, get to it! Hummus can go on pretty much anything and make it amazing. Example? This sandwich. It can be a main dish, a side dish, a dip, or a spread. It's essential!
  • Mustard, lettuce, sprouts, bread—these are self explanatory. I love mustard, in fact, some have said I have a small obsession. And I love sprouts. If you don't, leave 'em off! Vegan mayo is also an acceptable condiment for this (again, if you don't have vegan mayo in your life, WTF?).
So where do you get this stuff? Cody and I took a quick trip to Trader Joe's last night, but you can find this stuff at any small (or large) health food store in your area. Obviously, sprouts, lettuce, and mustard can be found at any grocery store—and chances are, you already have most of those in the fridge. Tofurky is great because it's super cheap, and is my favorite faux meat of all time—and it's got some pretty fierce competition. You can usually find Tofurky slices and hummus in stores for less than $5 each—so whether you're spending your own money, or asking your parents to shell it out for you, it shouldn't be too big of a deal.

Say Hello To Andrea December 15, 2008

Andrea is from California, but lives in Washington these days along with her family (including their dog Abby who was rescued from Puerto Rico). She loves reading magazines, playing video games, hanging out with friends, and designing clothing. She understandably hates puppy mills, slaughterhouses, fur, and of course, backstabbers.

Andrea is doing some great work as part of the Street Team including a successful campaign to get vegetarian options at school, so as always, we try to highlight some amazing students with a quick interview...

Is your family supportive of your animal rights beliefs?
Both my parents are extremely supportive of my decision of being a vegetarian. I even inspired my mom to become one as well and that turned out to be her New Year's resolution. My father is thinking of becoming one too. I can talk to them about all my ideas and they will back me up 100%. If I have an issue in school regarding the use of animals or foods, they're there.

What have others said about you and your compassion for animals?
Many people ask me why? As if becoming a vegetarian is impossible. If you truly believe in the cause and what you're doing, then it's as simple as can be. Most people say "I could never stop eating meat" but you could if you believe in the cause. Others are like, "That's nice what you're doing for animals, I wish I could do that," or when I tell them about all the bad things that happen they can understand how I feel, but mostly it's a question as to why? Animals have souls, feelings, families, they're no different than us, yet we discriminate them in a way that's disgusting.

What was the turning point when you decided to devote your life to animal rights?
After all the things I read about discussing animal rights and what went on behind closed doors I became extremely interested in helping out more. Once I started my freshman year I was determined to help out more. Last year I did my non-fiction book report on Animal Liberation by Peter Singer and by the way that book is amazing. This year I'm taking biology which is a requirement and I am refusing to dissect any animal in that class. I also made it possible for vegetarian options to be made at my school and I was so excited to see them up there on the menu.

What are some proud animal rights moments/big campaigns you worked on?
The only really big thing I've done and am proud about was the fact that I wanted to have vegetarian foods at my school, and I went out and did it. I was able to convince the food supervisor of my school to provide alternatives and we discussed things to eat, menu suggestion and came up with some great ideas.

See, you don't need to work on animal rights 24/7 in order to get stuff accomplished. You can still have fun, study hard and clean your room (your parents would want us to say that), and definitely dedicate a little time to a campaign and we're sure you'll win it! You'll feel great and the animals will thank you!

Get Vegetarian Food in Schools Across the Country October 7, 2008

Do you like to eat? Do you wish your school had more vegetarian food? Or just better food in general? Read on—this is really important.

In the new year, the USDA will be reviewing the Child Nutrition Act, which, amongst other things, covers the National School Lunch Program and School Breakfast Program. The USDA is accepting comments on how to revise the program until October 15th—um, more vegetarian food, most definitely—so please write today!

To send a message, either use this form, or send an an e-mail to CNDProposal@fns.usda.gov.

Here's a few things to remember when writing your e-mail:

  • Be polite. Being mean about the lack of vegetarian options your school has won't help. Besides, you're too nice to be mean.
  • Explain that you care about your health, the environment, and animals, and vegetarian food supports all of those things. Not to mention that everyone deserves to be accomodated regarding their ethical, religious, and dietary preferences.
  • List some options of what you'd like to see added. Bean and rice burritos, soy hot dogs, veggie burgers, and veggie chicken nuggets are all a good start. Go here for more ideas.
  • Mention your school specifically and how much you and your classmates would love vegetarian options!
  • Ask for soymilk as an alternative to dairy milk. It's great for vegans, those who are lactose-intolerant, and soy enthusiasts!
  • Be sure to say thanks for taking your thoughts into consideration.
When you send your e-mail, either BCC StreetTeam@peta2.com or copy and paste what you wrote in an e-mail to us, and we'll give you 500 points for writing.

It is so, so important for every single one of you to write to the USDA and ask them to include vegetarian and vegan meals in the National School Lunch Program. And please, have your parents write in, too. The more people that write in, the better. Change happens when people speak up (or in this case, write in)—the Child Nutrition Act is only reviewed every four years, so let's do something now!

Veggie Burgers At School? Yum. April 28, 2008

When sixteen year old Ashley Capps sets her mind to do something, it gets done. So when this Everglades High School student decided that her school lunch options sucked, she decided to take charge. She got lots of great media coverage for her work, which then inspired even more people to take steps toward vegetarianism!

I figured that her experience can help motivate many of you to take the same great steps, so here's a quick interview with Ashley.

What successes were you able to achieve for your school district?
I got veggie burgers and veggie chili added to the district's school lunch menus.

What steps did you need to take to get these vegetarian/vegan options?
I started a petition at my school and got over 300 people to sign it. I wrote a letter explaining why I did the petition and why I thought the new vegetarian foods should be added. I also included information about VegAdvantage and the benefits to vegetarian food and I sent it to the county Food and Health services.

How are other students responding to the healthier vegetarian and vegan options?
A lot of the students really like it. Many of them weren't expecting it to be as good as they are.

The local media got interested in the work you've done, can you tell us a little bit about their response?
They were really surprised that I was the reason that the new foods were added. I think they expected it to be a county decision and not something that a little teenager came up with. They really liked the foods though and thought it was a great idea.

Anything else you'd like to add for students looking to run successful campaigns at their school just like you have?
I would say just totally go for it. If you want to get something done and to do something good then you shouldn't let anything stop you. You really can make a difference.

Oh one last thing. If you were in a fight with Col. Sanders, who do you think would win and why?
I would win!! He doesn't have anything on me, plus I am nice to animals and he isn't!
