I live in Kentucky (which means no on the Cupcakefest), and we have ZERO vegan shops. I'd love the cookbook so I could make good desserts and what-not that my friends, family, and myself could enjoy!
My cupcake would be "The Smore". This would include chocolate cake stuffed with a marshmallow fluff filling and then topped with Graham Cracker flavored icing. The perfect summer cook-out dessert!
I'd love a blondie type brownie cupcake with walnuts and butter cream ~ and if I didn't live all the way in Miami I'd be at the festival in a heartbeat!
i haven't had a mexican pastry in years. a super creamy vegan tres leches cupcake would be heaven. interesting variations would be to add rum or coconut flakes.
another idea would be a vegan version of my grandma's "better-than-robert-redford cake." it's vanilla cake with a layer of crushed pineapple, bananas, and strawberries, covered with whipped cream then sprinkled with shaved coconut. it's light and fruity, but so sweet.

Wow, I just checked out the menu, it's cupcake heaven, I feel like I've been deprived all my life, I never knew those cupcakes existed. I'm thinking a cinnamon cake with apple filling and cream cheese icing sounds like a good idea. I was working the day of cupcake fest, sorry but I missed it.
My granny had a great chocolate coffee icing recipe that was vegan (depression era so supplies were limited). I'd pair it with a nice chocolate cupcake.
Or maybe a chocolate cupcake with a nice creamy coconut frosting.
A Pina Colada Cup Cake with a little umbrella on top of the frosting would be great. I wish I could attend but I live in Canada. If I had known a month earlier, my family could have used airmiles and come for the weekend. Maybe next year.

I absolutley ADORE cupcakes!
My cupcake flavor would probably be a cute raspberry barnyard cupcake, with a dark chocolate cake with green icing and raspberry filling, with little animal sprinkles on top!
Unfortuanatley, I can't make the cupcakefest, because I'm stuck in little old Missouri. D:
(Where I live has nothing to do with my love of farm animals. ;D)

I would create "Chocolate-covered Cherry" which would be chocolate cake filled with cherry preserves and cherry frosting with a chocolate-covered cherry on top!

When I was a kid, I sometimes bought lemon cupcakes which had creamy filling. If I could I would possibly try to recreate them without animal ingredients. (And no, I won't attend, mostly because I live thousands of kilometres away :))

I have a couple of ideas, but one really sticks out to me. I love cheesecake and caramel, so I think a Caramel Cheesecake Cupcake would be pretty awesome. I live in Kentucky (which means no on the Cupcakefest), and we have ZERO vegan shops. I'd love the cookbook so I could make good desserts and what-not that my friends, family, and myself could enjoy!

i haven't had a mexican pastry in years. a super creamy vegan tres leches cupcake would be heaven. interesting variations would be to add rum or coconut flakes.
another idea would be a vegan version of my grandma's "better-than-robert-redford cake." it's vanilla cake with a layer of crushed pineapple, bananas, and strawberries, covered with whipped cream then sprinkled with shaved coconut. it's light and fruity, but so sweet.
cupcakefest is the day before my birthday. i'll be there and i expect everyone to give me a birthday hug :-D

There is two things that I love in this world: one is peanut butter and jelly. I would looove to make a Peanut Butter and Jelly Cupcake. It would be a peanut butter type cupcake filled with grape jelly filling and peanut butter icing. mmmm such a great combo and two.. All American apple pie... would love to make a cupcake with a cinnamon like cupcake filled with chunky apple filling and vanilla buttercream frosting sprinkled with sugar. YUM! Also, have been making this for my boyfriend since we both LOVE orange soda. A Sunkist cupcake! It's sooo good! Basically, it's a cupcake make with real Sunkist orange soda and cream cheese or white whipped cream frosting. it's so amazing!! Will def be going to cupcakefest!

I have a couple ideas, lemon lavender cupcake which is a lemon cupcake and lavender (like the flower) infused icing. mmm A Hazelnut cupcake light chocolate cupcake with nutella like ganache on top maybe with a couple hazelnut crunches as a garnish. or a caramel pineapple mousse cupcake. White or yellow cupcake filled with caramel topped with caramel pineapple whipped cream mousse!! so yummy Yes will be attending cupcakefest!

Wow, I just checked out the menu, it's cupcake heaven, I feel like I've been deprived all my life, I never knew those cupcakes existed. I'm thinking a cinnamon cake with apple filling and cream cheese icing sounds like a good idea. I was working the day of cupcake fest, sorry but I missed it.

My granny had a great chocolate coffee icing recipe that was vegan (depression era so supplies were limited). I'd pair it with a nice chocolate cupcake.
Or maybe a chocolate cupcake with a nice creamy coconut frosting.
Hungry now!
I'm in Texas so no trip to cupcakefest.

I've never had a vegan cupcake but my favorite flavor would be a carrot/spice cake.

A Pina Colada Cup Cake with a little umbrella on top of the frosting would be great. I wish I could attend but I live in Canada. If I had known a month earlier, my family could have used airmiles and come for the weekend. Maybe next year.
