Cupcakes are one of my favorite things. They are also one of the things I was worried I would have to give up when I went vegan. If only my inexperienced vegetarian self had known that vegan cupcakes taste BETTER than regular cupcakes and are super easy to make!
For those of you that live in New Jersey or New York City (or near there) then you need to go to Cupcakefest on Saturday, June 21st. It's a day filled with vegan mini cupcakes, giveaways, and music by Junkpunch, And Then There Were Machines, Thing One, Brian Keith, and Kieran Hobler. The event is being presented by one of the most amazing vegan bakeries in Jersey: Sweet Avenue Bake Shop. Plus, it's free! So if you're in the area you have no excuse not to go.
For those of you that don't live in places where vegan cupcakes are commonplace then you need to pick up this book. Maybe you can start the first ever vegan bakery in your town!

To get you inspired to eat and bake cupcakes we're giving away one dozen cupcakes of your choice (roll over the names for picture and description) from Sweet Avenue Bake Shop and a copy of Vegan Cupcakes Take Over the World to one lucky winner!

Combining those two powerful forces is just plain crazy, but my friend Mylie was up to the challenge. Since today is our friend Joel's birthday, she decided to bake up some Nintendo madness for all to enjoy. Check it out:
Can you believe it? And let me tell you, they were delicious. Mylie loves to share all-things-glorious with others, so she sent me her vegan cupcake recipe to share with all of you.
Vanilla Cupcakes!
2 1/8 cups flour
2 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. salt
1 1/8 cups sugar
1 cup vanilla soymilk
1/2 cup vanilla soy coffee creamer
1 Tbsp apple cider vinegar
1/2 cup vegetable oil
1 Tbsp vanilla extract
Preheat the oven to 350°.
In a large bowl, mix all the dry ingredients until evenly combined. Then add all the wet ingredients and stir until smooth. Line a muffin pan with cupcake cups and fill each cup about halfway with batter. Bake for about 15 to 20 minutes (to tell if they are ready you can stick a small knife or chopstick into the middle of the cupcake to see if it comes out clean. If there is still batter sticking to it, it's not ready).
Once finished, remove from oven and take out pan. Place the cupcakes on a wire rack or heat proof surface to cool. Let the cupcakes cool completely before frosting them or the frosting will melt!
This will make about 20 cupcakes.
For the frosting, use a vegan already made frosting like Pillsbury Creamy Supreme Vanilla mixed with food dyes to get the color you want. And for adding details, use a vegan decorating icing, like Betty Crocker.
Now go get creative and make some unbelievable vegan cupcakes for your friends, too!

Everybody knows that vegetarianism is the ultimate turn-on. That is, except maybe for vegan cupcakes!
What better way to resolve this debate though, than to highlight the sexiness of vegetarianism... with cupcakes! That's what led the Western Animal Rights Network (WARN) at Western Washington University to hold their official "Vegetarianism is for Lovers" event on campus this Valentines Day!

The event drew over 150 students, causing the entire campus to hear about how sexy vegetarianism is! You can read all about how they did it by checking out their "Student Spotlight" entry HERE (or by clicking on the AMAZING vegan cupcakes below).

Boycott Mars Candy This Halloween! October 16, 2007

I plan on buying my candy soon, and let me tell you, I will not be purchasing any candy that Mars manufactures. Why?
Mars—maker of M&M's, Snickers, and Three Musketeers, among other candy—has funded cruel experiments in which mice were fed a candy ingredient and forced to swim in a pool of paint and water. The mice had to find a platform to try to avoid drowning, only to be later killed and dissected. Sick, right? Click here to read more and to send Mars a message urging the company to end all support of animal tests.
Please encourage your parents—and your friends, teachers, and classmates—to boycott Mars candy. Here are just a few options to buy instead (click here for a more complete list):

Who Wants Vegan Cupcakes? July 20, 2007

Anyway, as you may have noticed in the blog I wrote yesterday, it was Pulin's 37th birthday (okay, so he really turned 42, not 37), and our good friend Liz made him some oh-so-delicious vegan cupcakes. You may recognize the cupcakes from their nasty, animal-product filled, famous cousins. Anyway, here's a picture of the scrumptious vegan version:

And if you're wondering: Heck yeah, they're creme-filled! Why would anyone ever eat dessert that causes animals to suffer when stuff like this exists?
So anyway, when Liz dropped by the peta2 office yesterday, I filmed a short video of Pulin and Liz seeing who could eat a cupcake the fastest. Check it out:
And I'm not giving any names, but someone in the office actually volunteered to eat the cupcake that Liz had in her mouth. Whether he actually ate it or not, I don't wanna know.
