Yay for foodie holidays! I'm especially lovin' this one, 'cause tacos are SO easy to make and require zero fancy-pants culinary skills—which is good for me, 'cause I ain't got none.
Let's just jump right in, shall we?
Vegan Tacos
Chopped jalapeños, tomatoes, lettuce, black olives
Vegan cheese (I like Daiya)
Guacamole
Salsa
Burger crumbles (I like Boca)
Vegan chicken strips (try Morningstar Farms)
Olive oil
Taco seasoning, to taste
Vegetarian refried beans
Taco shells
- Place the vegetables, vegan cheese, guacamole, and salsa in separate dishes.
- In a frying pan, heat the faux meat in a little bit of olive oil. Add some taco seasoning.
- Cook the rice according to the directions on the package.
- Warm up the beans.
- Stuff the taco shells with all the nummy ingredients you want and enjoy!
What are some of your favorite taco ingredients?

this one is not vegan, but i do love using Morning Star veggie crumbles when making my tacos :] tacos sound delicious tonight, yay for national taco day!
Lightlife makes an excellent ground beef substitute. Check it out! You can also make your own "beef" with some textured vegetable protein granules.
I love to cook up some sliced red peppers, onions, corn and black beans in a frying pan with some red pepper flakes for spice. I add it to my tacos instead of the refried beans, I love it!
i know what i'm having tonight!
Now these actully look good! I usually just just have refried beans in mine. The vegan type of coarse
GUACOMOLE!!!!!:D
sounds yummy =)
I made this. The only thing I changed was I used morningstar crumbles and black beans instead of refried beans. I have been making this recipes for several years now. It is less fat, more healthier, better tasting and guilt free about eating poor suffering innocent animals. No one is supiors than animals.Who give humans the right! I will NEVER eat animals again.
