I know what you've all been thinking: "OMG—what in the heck is Marta going to make for her green recipe this week?" Well, rest your curious minds, friends—the time for Stuffed Green Peppers is here!
Stuffed foods are amazing—just sayin'. Stuffed crust pizza, jalapeno poppers (stuffed with vegan cream cheese!), stuffed mushrooms, stuffed shells, whatever! Vegans can eat it all, and stuffed peppers are no exception. I decided to make mine with a slight twist on the standard ground beef and rice stuffed peppers, using veggie burger crumble and couscous instead—and now I'm addicted. But it's not a dangerous addiction, so I'm OK with it. ♥

Here's what you'll need:
- 2 green bell peppers
- 1 cup couscous (follow directions on the box to make this—it's so quick! Hint: A flavored couscous, like garlic and olive oil, works awesome in this dish.)
- 1 cup veggie burger crumbles
- 1/2 can diced tomatoes (mine also had green chilies)
- 1 small onion, chopped
- Nutritional yeast, to taste (optional)
- Salt and pepper, to taste
- A bit of olive oil or cooking spray, to sauté in
Preheat your oven to 350 degrees.
Slice the tops off of both bell peppers, and remove the seeds and such from the inside. Chop up any of the usable part of the top and set aside. Boil a pot of salted water, plop in the two peppers, and cover. Reduce to a simmer and let look for 5 to 7 minutes, then remove and carefully drain the water. While your peppers are simmering, in a large pan, sauté your onions and the chopped up peppers that you set aside in a tiny bit of olive oil, until the onion softens a bit. Add in your veggie burger crumble and continue to stir for another 3 minutes, then add in your diced tomatoes and nutritional yeast (if using), and mix it all up. After 2 more minutes, remove from heat, and then mix in your couscous, salt and pepper.
Grab an 8×8 glass dish and place your two peppers in there, then fill with the mixture—you'll have some left, likely. Pop the dish in the oven, and bake for 45 minutes to an hour. Snack on the leftover filling mixture while it's cooking!

looks so yummy!! i LOVE jalapeno poppers…stuff them with vegan cream cheese, then dip them in soymilk/flour/soymilk again/breadcrumbs and fry 'em up. so good…well, maybe not nutritionally, but good for the soul and defiantely better than the "real' thing.
Wow! Never knew they were this fairly easy to make. I'm heading to the store for ingredients now and can't wait for around 5 o'clock to eat these for dinner!
