Recipe of the Week: Kale Chips!

This month's "Recipe of the Week" theme is green! What does that mean? I guess you'll have to keep coming back every week. I'll give you a taste of what I'm cooking up for the first blog for this month's theme.

I'm going to be blunt about this; don't be a wuss and not give this recipe a try. I know what some of you are already thinking, "Kale? For real? Ew! Cody, I'm sticking with Ryan's BBQ Wing Mac 'N Cheese Wrap!" If my friend Daniel, former peta2 Road Warrior and singer of the epic Band of Mercy, says kale is tasty—then I'm going to give it a shot. Kale is our friend, and not only because it'll help prevent us from being pinched in the coming weeks. Kale is packed with calcium, fiber, iron, and our friend—protein (insert mental picture of me flexing). So what tasty treat can be made with this veggie? Friends, I want to tell you about your new favorite snack—kale chips!

What you need:

  • 1 bunch of kale
  • 1 tablespoon of olive oil, or vegetable oil works
  • Pinch of salt
  • 1 or 2 tablespoons of your favorite seasoning (I used nutritional yeast and garlic salt)

This recipe is just as easy as the $3 Dish of the Day recipes we've been posting, so don't think you need a deep fryer or anything like that. Simply turn on your oven and heat it up to 350 degrees. Tear pieces off kale from the stem (about 1 inch pieces, or whatever you want), give them a good rinse, dry them off, and then place the kale on a baking sheet. Drizzle 1 tablespoon of the olive oil on the kale, then sprinkle some salt, and go nuts with the seasoning of your liking. Now pop the soon-to-be chips into the oven for about 10 minutes, and get your taste buds ready! Let them cool for a minute or so and then take a bite! That's it!

    I make these all the time, since my boyfriend always has kale for our rabbits at his apartment. Try mixing in lemon juice with the olive oil – it's so good.
