Recipe of the Week: Vegan Chicken Parmesan Burgers!

Posted on September 16, 2010 at 10:56 am | Permalink | Comments (8)

I don't know about you, but I don't have a lot of time to spare these days. Between the peta2 live chats, yelling at the TV when Lady Gaga appears on the screen, and practicing my hugging in advance of this year's Hug a Vegetarian Day, who's got time to make dinner?!

That's why I stick with the quick and easy recipes that made peta2 author Marta Holmberg the international celebrity that she is today. Straight from her dorm room manifesto, PETA's Vegan College Cookbook, I give you the "Chick-Un Parm Sammich."

Here's what you'll need:

  • 1 vegan chicken patty (I like the spicy ones, to give it a little kick)
  • Whole-wheat buns
  • A dollop of marinara sauce (I'm partial to the chunky garden kind, with lots of garlic and onions)
  • Vegan mozzarella cheese, to taste (I always use Daiya brand, you know, because it's the best)

It's simple: Just microwave the chicken patty according to the directions on the box. Then, microwave the marinara sauce for about 45 seconds, or until warm. Pile some vegan cheese onto the chicken patty, and pop it back in the microwave for another 45 seconds, or until the cheese is all melted. Slide that bad boy onto a bun, pour on the sauce, and bellissimo!, vegan chicken parmesan from the microwave.

Now, back to my hugging …

I found a store that sell already prepared vegan chicken parmigiana. So I will use that and yes it is expensive.

Actually, Erick and Jen, this sandwich is quite affordable! Vegan chicken patties can be found in every grocery store (even Wal-Mart), buns and sauce are super-cheap, and Daiya cheese sells in bulk, so you'll have lots of leftovers. :)
