What's the number one thing you hear when you tell someone you're vegan? Most likely it's the common (and obnoxious) "What?! I could NEVER give up my BURGER!" Vomit. Ground beef is made up of all sorts of unmentionables … I'll spare you the details now, but check out this blog for an idea.
ANYWAY, some people are still kickin it in the dark ages … don't they realize that veggie burgers are everywhere!? Well, we're here to prove that you can have a great burger minus the e.Coli and grossness. This month's Recipe of the Week theme is veggie burgers! And I'm kicking it off with my "Avo-Bella Mozzarella" burger! Check it out:

Here's what you need:
- Boca "original vegan" burgers—pick them up at your local grocery store
- Daiya mozzarella cheese—check your local health food store
- Portabella mushrooms, avocado, and tomato
- Buns
- Olive oil
Alright, let's get started! Grill your burgers up in some olive oil—you can use a tabletop grill, the stovetop, whatevs. While they're cookin, throw some chopped portabella mushrooms into a pan with some olive oil (I also threw some garlic powder, cracked pepper, and various other spices in with the mushrooms). Saute the mushrooms for about 10 minutes. Slice up some tomato, avocado, and get your buns ready! Right before your burger is done, throw some Daiya cheese on it, and cover it in the pan to get it to melt. Once the cheese is all gooey, put your burger together and devour! YUM!
