Recipe of the Week: Guacamole Hummus!

Appetizers: I'm obsessed with them. Anything portable, vegan, and lovely that comes packaged in an edible wrapper (like say this, or this, and definitely this) has my undying love. And there's one other type of appetizer that owns a piece of my ♥ : Anything that can be eaten with a munchable scoop. Right?!

If you're anything like me, you can devour guacamole or hummus faster than the Glee cast can break out into song.  So … why not combine them? *Drool*

I give you: Guacamole Hummus!

Here's what you need:

  • 1 whole avocado, de-pitted, with the skin removed
  • 1 15.5 oz. can chickpeas (garbanzo beans), rinsed and drained
  • 2 to 3 cloves garlic, minced
  • 1 tsp. olive oil
  • Salt, to taste
  • Water
  • 1 to 2 stalks green onion, chopped (optional)

Throw the chickpeas, avocado, garlic, olive oil, and salt into a blender. Add 2 tablespoons water and blend. Continue with the water/blend process until you reach the desired consistency. Transfer dip to a bowl and stir in green onion, if using. Serve with chips, crackers, or veggies.

This recipe is ridiculously easy, so get to making and eating it! It's also great as a spread on a sandwich with some veggies and vegan deli slices—just sayin'.
