peta2's Sandwich of the Week: No Chicken Salad Sandwich October 1, 2009

Hey everyone! Jackie here—you probably e-mail with me, and I'm sure you definitely want to know what kind of food I like to eat (right?!). Well, you're in luck! It's my turn to share one of my favorite sandwiches.

It's the No-Chicken Salad Sandwich! It's super easy and tastes amazing. In fact, your friends and family won't even be able to tell that it's vegan! Most of the ingredients can be found at your local grocery store. Eggless mayo and Morningstar Farm products are even popping up at more and more grocery stores now, and you'll definitely be able to find them at your local health food store!

Here's what you need:

-Morningstar Farms Chik'n strips
-Eggless mayo (Vegenaise is by far the best, regardless of what anyone else tells you!)
-Sugar, salt, and pepper to taste
-Any chopped vegetables and extras your little veggie heart desires! (I used apple, raisins, and green onions and it was amazingly fantastic!)
-Bread of your choice (I used a whole wheat ciabatta roll that I found at the grocery store that just happened to be vegan!)



And here's what you gotta do:

-Thaw the "chicken" strips and tear into smaller pieces.
-Add any chopped veggies or extras that you are using.
-Then stir as much eggless mayo as you'd like.
-Add sugar, salt, and pepper to taste and pile high onto your bread.

So easy!

It sounds awesome, but doesn't the label on the Morning Star chicken thing say something like....
"
Keep Frozen Until Ready to Use. Cook thoroughly. For Food Safety and Quality, Heat to a Minimum Internal Temperature of 160°F."

Did you cook it beforehand in the microwave or something?

You can use the microwave for the "chik'n" strips! :) Sometimes I even brown the strips in a skillet first--makes it super yummy! :)

I've had the privilege of trying one of Jackie's sandwiches before, and I can assure everyone that they are amazing! So delicious, and she insists they are very easy to make. Try it out on your meat-eating friends and show them how delicious veggie eating can be!

I never really liked morning star's meal starters: chicken strips. Did I cook them wrong or something? Are they good if you prepare them a certain way? That looks yummy ;)

It is a real shame that Morningstar (a.k.a Kellogg's) proudly uses genetically modified organisms in the vast majority of their products. I recommend that everyone call them to complain; I do about every other month. Check out Quorn vegetarian products, they are meatless, soy-free and taste great.

Absolutely use Quorn chikN products. they totally taste like chicken. I've had a meateating friend tell me they are lying and that it IS chicken..lol.

we dont have those chicken strips here. the morning star section consists of nuggets, hot dogs, patties, and the "ground beef". my husband and i live on an army base in germany and the store is massively tiny. atleast they have a small selection.

I spotted something disturbing today - Baconnaise! It's mayonnaise with bacon flavouring! Ick!!
