Everyone knows summer time = ice cream time! And, this week, you have the chance to win Lick It! — the ultimate vegan ice cream recipe book. What You'll Need:

1 3/4 cups soy milk or other non-dairy milk
1/3 cup granulated sugar
3 tablespoons unsweetened cocoa powder
1/3 cup semisweet chocolate chips
1/2 teaspoon vanilla extract

Pour the soy milk into a small saucepan. Whisk in the sugar and cocoa powder. Warm on medium heat until the soy milk begins to simmer. Remove from heat and stir in the chocolate chips and vanilla extract. Cool to room temperature. Poor into pop molds and freeze. (Makes 8 2-ounce pops)

i have so many favorites.
one of my favorites is a vegan sundae. i use vegan butterscotch swirl soy icream, some oreo crumbs, vegan organic chocolate syrup, cherries, banana slices,chocolate chips, vegan brownies, and water melon on the sides. if im lucky i have soyatoo whip.
i usualy eat this with my boyfriend as its a lot of food, but sooo good.

hmm...my favorite treat has gotta be homemade soy frozen yogurt. it's cool, refreshing, healthy, and i can make it using whatever ingredients i want. take that, pinkberry! =]

materials
-ice cube tray
-lollipops (different flavors)
-juice (different flavors)
-tape
Directions:)
-mix different flavors of juice in a glass
-pour the juice in the ice cube tray
-put lollipops in each square
-put tape around the lollipop stick and stick the excess in the tray. you'll do this to make it stand straight and steady
-now put it inside the freezer to make it frozen
-check if its frozen and if it is frozen put it out of th efreezer and pull out the tape to get one of th ecubes from the tray
-start licking and enjoy!!:))

One of my favorite summer treats is called a banana boat.
what you need:
a banana
vegan friendly marshmallows
semi sweet chocolate chips
peanut butter

How to make:
peel back one side of the banana but dont tear it off. Then cut a slit in the exposed banana. Next stuff a couple marshmallows, some chocolate chips and some peanut butter into the slit. then cover the banana with the peeling.
You can either A) wrap in aluminum foil and place in a campfire for a few minutes until the marshmallows and chocolate are melted or B) wrap in a paper towel and place in the microwave for about a minute or until the marshmallows and chocolate are melted.

This is an amazing treat especially when going on a summer camping trip!

I like to make vegan cookies. I pour some soy milk over it to soften it up. Then i crush up the cookie and add some tofutti vanilla ice cream over it. And then i have a delioucious vegan ice cream cookie thing

Not very original, but delicious.

Take a big ball of ice cream, any flavor (chocolate works the best) and put in a mug.

Open a can of fruit cocktail, take like 4 or 5 spoons and mix it (using the spoon) with the ice cream. Use a couple of spoons of the syrup that comes with the cocktail, that will make the ice cream softer.

My favorite summer treat is definetly Tofutti Cuties. I went to Whole Foods the other day, which is quite a drive away from my house, and filled the cooler with them. I love that they're smaller so I can proportion myself better with them. Not to mention they're DELICIOUS!

Shake & Make Soy Ice Cream

What You Will Need:
2 tbsp. Sugar
1/2 tbsp. Vanilla
1 pint-sized plastic zip bag
1 cup Vanilla Silk
6 tbsp. Rock Salt
1 gallon-sized plastic zip bag
mulit-colored Sprinkles

How To Concoct It:
1. Fill the gallon-sized plastic bag half full with ice. Add rock salt and seal.
2. Pour sugar, soy milk, and vanilla into the pint-sized zip bag and seal.
3. Place the pint-sized zip bag into the gallon-sized zip bag and seal.
4. Shake the bag for 5-7 minutes. (Cuidado: Use hot mits, cuz your hands will get cold!)
5. Use scissors to snip a corner from the ice cream bag to squeeze onto the cone -- soft serve style.

The Kids LOVE it!!!

The summer is always fun for me. I love the grass beneath my feet and I love to lay down in it too. I think the most delicious summer treat is not anything of chocolate or sweets, it is getting time with mother nature and spending time laying outside on a beautiful day during the summer.

- What more can you ask from mother nature!? We have everything we need, just from her!

Ingredients
1-3/4 cups unbleached flour or whole wheat pastry flour
1 cup cane sugar or turbinado sugar
2 teaspoons baking powder
1/4 teaspoon fine salt
3/4 cup soy milk
2 bananas, overripe, mashed
1/2 cup safflower oil or any light vegetable oil
1 teaspoon vanilla
3/4 cup vegan chocolate chips
Prepare;
reheat oven to 350 degrees. Spray a 9-inch square or round pan with Pam or other baking spray.

Put dry ingredients into a bowl. Blend with a fork. Add oil, soy milk and vanilla. Stir until the mixture comes together, but don't overmix. Break bananas into chunks and drop into the batter, mash with a fork and mix briefly. Fold in chocolate chips.

Pour into prepared pan and bake on center rack for 35-40 minutes, just until cake tester comes out clean.

Remove from oven, place on wire rack to cool. To serve sprinkle with powdered sugar and enjoy! Also great with crushed pineapple or berries.

Here's a tip. If you like a smoother banana texture, break bananas into a seperate bowl, mash and mix well, until smooth, then fold into the batter.

Overmixing your batter will create a more dense cake with a tougher crumb. Cakes should be gently mixed until dry ingredients are incorporated, unless specified otherwise.

HOMEMADE DOUGHNUTS

1 c. milk, scalded
2 tbsp. butter
1 tbsp. sugar
1 tbsp. brown sugar
1 pkg. yeast
3 c. flour
1 tsp. salt
1/2 tsp. nutmeg
1 egg
Confectioners' sugar

Pour milk over butter and sugars; stir until melted and cool to lukewarm. Add yeast, stirring until dissolved. Sift flour, salt and nutmeg. Gradually add half the dry mixture to milk; add egg and beat well. Add remaining flour and leave dough in warm place for 1 hour. Knead gently, roll to quarter inch thickness and cut into diamonds. Allow to rise 30 minutes to 1 hour. Fry in deep fat, 375 degrees and dust with confectioners' sugar or use confectioners' sugar glaze if desired.

my favorite summer treat has to be my moms delicious home made lemon-lime sherbet.
the mix of the tofu and fresh lemons and limes is great on a really hot day.
its also really great to enjoy on a blazing hot day at warped tour.

I find it tasting better and i know it gives me a good feeling inside when i know im not drinking an animal by-product. Instead Im doing my part and having a tasty treat.

Fig and Raspberry Rice Pudding!

Serves 6

what YOU will need:

3/4 cup (190 mL) brown short grain rice
1 cup (250 mL) water
1 tsp of salt
4 cups (1 L) vanilla-flavoured rice milk
1/2 cup (125 mL) brown sugar
2 cinnamon sticks (sub: sprinkle cinnamon on top when finished)
1 tsp (5 mL) lemon zest

Topping:

1 7-oz (200 g) package frozen raspberries
2 cups (500 mL) quartered fresh figs
1/4 cup (65 mL) pure maple syrup
1 teaspoon (5 mL) lemon zest

In a large saucepan, bring rice, water and salt to boil over medium-high heat. Reduce heat to low, cover and simmer, until most of the liquid has been absorbed, about 15 minutes. Gently stir in rice milk, brown sugar, cinnamon sticks and lemon zest, ensuring mixture does not stick to the bottom of the pan.

Increase heat to medium-low, stirring often, until rice is tender and very creamy, about 40 minutes. Do not overcook or rice will be solid and not creamy when cooled. This treat will stay good for up to 4 or 5 days in the fridge.

Topping:
In saucepan, combine the raspberries, figs, maple syrup and lemon zest. Heat over low heat until warmed through and sauce thickens slightly, about 10 minutes. Cover until ready to use.

Serve rice pudding warm or at room temperature topped with the fig and raspberry topping.

Tip: Use any seasonal fruit to replace the figs when out of season and try to support local farmers when possible!

This is going to sound really bizarre, but it's a homemade favorite. It's called Chokecherry Vinegar Juice. Don't let the name put you off.

First get your hands on a large portion of chokecherries. They're little black berries with a large pit in the middle.

Next, you need to blend them with vinegar and store them in a gallon pail overnight.

Now you have to strain all the juices from this combo. It works best to use a mesh bag and squeeze all the juices into a large bowl. It can be a little messy, so be sure to wear old cloths!

Now get a large pot ready on the stove. Pour the juice into it, and add sugar. Use 1 cup of sugar for ever 1 cup of juice. And boil.

If you made a large batch you'll have to can the juice. But if you have a smaller amount you can store it in your fridge.

To make the final product, you put about 1/2 cup of the juice in a juice jug, and add water. You could add a little sugar if it's not quite sweet enough.

It's a lot of work, but that just makes the finished product all the more delicious!

mmkay so ive been vegan for only a year,but ive also turned many others to veganism, i look around at al these icecream shops and wonder how they can call em things like "holy cow"?!
the conditions the cows are in,raised to be milked and things in horrible conditions and with machines hooked to them, how can it be near holy..i write into these places telling this stuff and they still continue on...i ask them to imagine being taken from your parents and being hooked up to machines until you die then get disposed of, like your worthless...wow,
im no fan of ice cream[i stick to the fruity frozen stuff] but my friends still have their cravings... and id love this book!

i love freezerpops... the ones that you push up the ice and bite it. and then, after you eat all of the ice, you drink the melted ice at the bottom.

you'll need fresh (warm) brownies, vanilla ice cream (or frozen yogurt) and raspberries.

roll the raspberries in water and sugar and stick them in the freezer. once they're almost hard, mix them in with the vanilla ice cream and put ontop of the warm brownies. top with any kind of syrups you want.

My favourite summer treat is a banana split. I cut a banana in half, freeze it, and when I am ready to eat, I put scoops of ice cream in the middle, topped with chopped nuts, and sometimes a drizzle of chocolate syrup or agave nectar if I run out of the chocolate.

I've got these cute fruit-shaped molds to put fruit juice into to freeze and toss in with vegan sherbert or stick a tooth pick in for the kids i baby sit to pretend they've got 'baby popsicles'.

The best icecream in the world is pretty much anything from Dairy Queen. However, when ever I go there I order a cup of soft vanilla icecream, with gummy bears, and sprinkles (rainbow :p ). Of course to finish it off you add cherries; Multiple cherries. A very colorful, yummy treat.

2 cups fresh pineapple chunks
1 large banana, sliced
3/4 cup light coconut milk
1/4 to 1/2 cup agave necter

Puree all ingredients in blender 1 to 2 minutes, or until mixture is smooth. Ladle into ice pop molds, and freeze at least 4 hours. Run molds under warm water to unmold.

My favorite summer treat is fresh fruit. I love eating nectarines, grapes, berries, mangoes and more. It's fun to make a fruit salad, fruit kebobs or eat them by themselves. Also making vegan cheesecake and topping it with fresh berries is delicious.

I love bubble tea. They are smoothies made out of fruits, a bit of sugar, soy ice cream or soy milk to make it cold and creamy, and tapioca pearls. Tapioca pearls are boiled first. You take a spoonful and fill the bottom of a cup and then pour in the smoothie on top. But you have to drink them with a huge straw. x]

My favorite summer treat is putting a zebra cake in the fridge to get it cold, along with mini twizzlers, icing, apple jacks, froot loops.

once there chilled to your perfection you can make a robot [:
fruitloops for the eyes,
Apple jacks for the arms.
Twizzlers for the feet.
Icing for the mouth.
And a lollipop for the antenna (optional ) [:

I totally want this cookbook! I know so many vegan dinners and such so having a vegan ice cream cook book would be fantastic! I love cooking vegan foods for my friends and family. I recently just made my mom an amazing vegan chocolate cake with home-made vegan butter cream frosting and she had no idea is was even vegan! Mmm
Here is the recipes guys :]~

Vegan Chocolate Cake:

* 1 1/2 cups unbleached white flour
* 1/3 cup unsweetened cocoa powder
* 1 teaspoon baking soda
* 1/2 teaspoon sea salt
* 1 cup Sucanat, or other granulated sugar
* 1/2 cup organic vegetable oil (ie. organic Safflower or organic Canola)
* 1 cup cold water
* 2 teaspoons pure vanilla extract
* 2 Tablespoons vinegar (Apple Cider Vinegar or Brown Rice Vinegar)

1. Preheat oven to 375 degrees F. Sift dry ingredients into a bowl. Add liquids (except vinegar) and whisk until batter is smooth. Pour into an 8" square or 9" round baking pan. Add vinegar and stir quickly, until it is evenly distributed.

2. Bake 20 minutes and test with toothpick in center of cake. If it doesn't come out clean, then continue to bake, but check for doneness every 3 minutes.

3. Cool and frost.

Yield: One 8" or 9" cake.

Variations:

* Add non-dairy chocolate chips to the batter
* Add sun-dried cherries
* After frosting, press sliced and toasted almonds along the sides of the cake, and sprinkle a few on the top for a pretty presentation


Vegan Fluffy Butter cream Frosting:

* 1/4 cup non-dairy and non-hydrogenated shortening
* 1/4 cup non-dairy and non-hydrogenated margarine
* 1 3/4 cups organic powdered sugar, sift, if clumpy
* 3/4 teaspoons vanilla extract
* 1/2 cup Sucanat, or other granulated sugar
* 3/4 teaspoons vanilla extract
* 1/8 cup plain non-dairy milk or non-dairy creamer

Beat the shortening and margarine together until well combined and fluffy. Add the sugar and beat for about 3 more minutes. Add the vanilla and non-dairy creamer, beat for another 5 to 7 minutes until fluffy.

Yield: 2 cups. (I've halved the original recipe. Freeze leftovers, or double the recipe for a double layer cake.)

My favourite summer treat are just simply popsicles. I don't know what it is about them, they just appeal. My favourite flavour most definately has to be either the red ones, that don't really have a distinct flavour, but are supposed to be cherry, or orange, because orange is awesome!

My favorite summer treat isn't cold at all. I love getting little pastry dessert breads for shortcakes. Then I get fresh strawberries and cut them into little pieces, cover them with some sugar, let them sit for an hour till they're nice and sweet. Then I get the whipped cream i made and make my very own STRAWBERRY SHORTCAKES with my little sis and my best friend. That's what I love to do. It's delicious, fun to make, and creates quality time with them at the same time!

Maple Granola Ice Cream

Ingredients (use vegan versions):

2 cups low fat soy/rice milk
1/2 cup sugar
2 teaspoons vanilla extract
1 teaspoon maple extract
2 heaping tablespoons fat free vegan granola cereal
pinch of salt

Directions:

Mix all ingredients except granola together in bowl.

Freeze the mixture in an ice cream maker according to the manufacturer's directions.

When mixture is nearly frozen, add granola.

Makes: 1 quart, Preparation time: 5 minutes + ice maker time

Enjoy this totally VEGAN treat while not only feeling good about help saving animals, but also by helping to keep your body healthy and gorgeous!!

my favourite thing to make, especially on holidays like the 4th of july, is cake. you make cake from those packages you can get at the store, subsituting anything you want, and when it cools, you spread your frosting of choice on, then stick on different fruits, like sliced strawberries, blueberries, bananas, blackberries, rasberries, anything like that. there's almost never any leftovers, but it's just as good the second time. you could even change it to cupcakes.

I think the best way to beat the heat in the summer is frozen chocolate coverd bannanas. My mom used to make them for us all the time when i was little. There pretty healthy, and they dont melt away! :)

I always love to eat otter pops on the hottest days of summer. Here in Hawaii, that's almost every day! I think the best way to eat them, is let it melt a bit so you have some syrup at the end to drink up! Yum!

My favorite summer dessert is vegan brownies with double the amount of vegan chocolate chips in a bowl with home-made vegan ice cream made with vanilla Silk soy milk. Even better if you add vegan chocolate or strawberry syrup. =]

Creamy-Fruit Salad :)

what you will need:

~Vanilla Ice Cream :) (any one will do)
~watermelon (needs to still be in shell thing:P)
~various fresh fruit (strawberries, cherries, whatever you like:)
~whipping cream (optional)

What to do:
~cut the water melon in half and scoop out the melon so your left with a bowl. set aside
~chop up all your fruit into bite size pieces and place in a medium size bowl. set that aside
~pour the whipping cream (as much as you like) into a bowl and mix until light and fluffy. (this will go by faster is you use an electronic mixer) you now have homemade whipped cream
~get the ice cream from your freezer and mix it into your fresh fruit until nicely blended (mix this yourself an electronic mixer will squash your fruit:O)*if the ice cream isn't soft leave out a minute or 2*
~put the fruit and ice cream mixture into the hollowed watermelon
~place your homemade whipped cream on top

SERVE QUICKLY

Ingredients:
1 (12.3 oz.) package firm or extra-firm Silken tofu
2/3 cup non-dairy milk
1/3-1/2 cup vegan sugar or alternate, according to your taste
2 tablespoon unsweetened organic cocoa powder
4 teaspoon pure vanilla extract
pinch salt

This is also great for the kiddos. My niece loves them!
You may add a little espresso powder to the mix to add a great flavor. or be creative and add your own flavoring ideas.

Iced Choco-Lavender Swirl

1 bin of Vanilla Vegan Soy Ice cream, or Rice Ice Cream
A few drops of Lavender essential oil (not to many - start with one or two and add more to taste)
A vegan dark chocolate bar
1 blender
A few bowls and spoons

Cut up the vegan dark chocolate bar into small pieces (shavings are good)
Put Vanilla Soy Ice cream in the blender
Add the lavender essential oil
Add the chocolate shavings

Blend!!!!

Spoon out into pretty little bowls

EAT!!!!!! Preferably outside in the sunshine.

Oh, man this is awesome.

I would have to say my favorite summer ice cream treat was once a cookie dough Blizzard, but now the closest thing I can get is cookie dough soy ice cream (which, of course, tastes phenomenal, but not quite the same...).
If I could get some recipes to help me get started in the vegan ice cream-making direction, I could have my old favorite back!!! (Or if it has a recipe for something similar to an M&M McFlurry, I would be soooo happy!)

My FAVORTIE SUMMER TREAT IS:

Lemon "Sherbert"

The Ingredients:

* about 12 oz can frozen concentrated lemonade (you can buy organic brands of this).
* 1 (12.3 oz.) extra-firm tofu
* 2 cups water
* 1/2 cups very light vegan sugar, or to taste
* pinch salt
* 1/2 teaspoon agar powder or 1 tablespoon agar flakes

Blend the lemon or limeade in a blender with the tofu, water, sugar and salt until VERY smooth. Pour 1/2 cup of the mixture into a small pot or microwave-proof bowl. Sprinkle the agar over it and stir in. Let stand for a few minutes. Then, heat over high heat, stirring constantly, until boiling, or microwave until it boils. Simmer the agar powder for 1 minute, the agar flakes for about 5 minutes. Pour the mixture back into the blender, scraping the bowl with a rubber spatula. Blend briefly. Freeze according to your ice cream machine's directions.

this makes like 6 cups and it is sooo yummy.
ALso i would just like to say that the bag is absolutely CUTE!!

what makes my summer delicious and tasty are smoothies! i've been on a smoothie rampage with my newly bought blender!
my favorite smoothie thus far:
"Nanaberry"
1/2 banana
1/2 cup of strawberries
1/2 cup of blueberries
your choice of 1 cup of water, soy milk or juice (I use water)
your choice of 1 cup of ice, soy ice cream or soy yogurt
blend until smooth!

this is soooooo goood! i sometimes eat it for breakfast. mmmm. if you want to switch it up and make it more dessert-like, use chocolate soy milk and chocolate soy ice cream! hurray!

my ma takes this sweet bread and stuffs them with ice cream and this special cram. then she dips them in white chocolate (Vegan) and lets them cool in the freezer. yeah of course she has to hurry and put the chocolate on because of the ice cream. and when they come out its delicious. but u have to eat them quick cause they can get messy. lol :)))

my favorite summer treat has go to be vegan chocolate mocha fondue.

all you need is 1/2 cup strong brewed coffee, 2 tbsp sugar, 8 ounces vegan chocolate; broken into pieces, 2 tbsp soy margarine, 1/2 tsp vanilla.
&who doesn't have that? (:
it's reallly easy to make and you can have it during any season. :D

I love my mom's short recipe for Strawberry Delight.
-Any number of strawberries
-Vegan cream of any vegan brand
-occasional sugar

You wash the 'berries and place in bowl. You place in as many cream as you want, then mix in occasional sugar and then BAM!! Instant Fruity, sweet, vegan snack!! Just not too much sugar, Try splenda, so you don't get calories.

STRAWBERRY FUDGE "CHEESE"CAKE!!!

Ingredients:
1 vegan graham cracker pie crust
16 oz. vegan cream "cheese"
1/3 cup sugar
4 EnerG Egg Replacer "eggs"
1 teaspoon vanilla
juice of 1 lemon
strawberries
vegan fudge

Oh, I love making vegan carob brownies and putting vanilla ice cream on top (Rice Dream is one of my favourites). Sprinkles and peanut butter on top makes this even more absolutely delicious. Gosh, now I just feel like ice cream. xp

i would have to say mine is the concret pie from wingers! they mush together oreos and then freeze it into a crust and then put cookie dough ice cream on top of it and put tons of whipped cream at the end! it is soooo good! (:

alright my favorite summer treat would have to be...well i dont know what to call it.
so i'll describe it. =]

first, you gotta make vegan ice cream out of soy/ricemilk, a frozen banana, and [i use] a frozen nectarine...and a bit of sugar.
it tastes so fruity and delicious!
and then...YOU CRUMBLE OREOS AND PUT EM IN!
OH MY GOSH ITS AWESOME!

haha i think i'm overreacting.
but that is good stuff.

+ actually I don't have a particular favorite, coz I LOVE EVERYTHING xD without the need for animal's lives ofcourse.. hmn .. but the simplest treat I got to prepare is some vegan fruit yogurt then I put it in the fridge then presto! I've got instant non fat healthy fruity yogurt sorbet :D

My grandma always made this great desert when I was younger which I make all the time at my house, without jello of course, because who wants to eat that nasty crap?!

It starts with a layer of angel food cake, then banana pudding, then a layer of strawberries, bananas, and pineapple, topped off with whipped cream! It's a great way to cool off after being outside :)

My favorite summer treat is anything with chocolate and Oreo cookies on it. I am an Oreo and chocolate ADDICT! Some I like are delicious fruit ice cream(Anything from strawberries to bananas, I love fruit) and then you could top that super tasty treat off with some nice Oreo cookies. A cold and yummy treat that's perfect for the heat of the summer!

Of course to have the most delicious summer treat, you have to begin with the most delicious summer fruit, the berries. You can't ruin this treat, the more and varied the berries, the better. Easy as pie, (another treat) fill a blender with a glass of water, one scoop of delicious vanilla protein powder and cut up berries. You can add a banana (cut up) if you wish, a scoop of coffee (or any flavor) ice cream, if you wish. You can change the water to milk, for a richer shake. The sky's the limit. The variety is only limited by your choices. I've not had one smoothie this was that isn't delicious.

And I love to eat piñacolada or passion fruit sorbet with some bananas and strawberry mites scattered all over. It's delicious. You should try it.

Mmmm...My favorite summer treat would have to be fruit tofulato. It's a nice blend of frozen fruits and tofu mixed together to make a nice slushie mixture..Plus, you could use so many different varities, depending on which fruit you enjoy the most. Yummi goodness! (^ - ^)/~

This is my vegan ice cream... I've been making it all summer!
You'll need
1 cup of chocolate Rice Dream
1/2 Banana
1 tbs. peanut butter
Blend all the ingredients together, then put it in the freezer for about 2 hours, or whenever it is half frozen. Then mix, and enjoy!

My favorite.. that's ahard thing to choose. But it would have to be vegan Chocolate mousse. I got it in my vegetarian starter kit from PETA and meat.org. I have the recipe right here.

1 1/4 pounds silken tofu
3/4 cup of chocolate chips, melted.

In a blender, purree the tofu until smooth. Add the melted chocolate and blend thoroughly. Pour into six individual desert bowls and chill.
Optional: Dust with powdred sugar or top with a strawberry or other berries.

thsi is one of the best tasting desserts I have tasted in my life.

**RASPBERRY LIME BREEZE SHERBERT**

Raspberry Lime Breeze has been a long-time favorite summer treat with my family and I. My little sisters often request that I make it.:D

The ingredients are simple:
2 1/2 cups fresh raspberries
1/3 cup orange juice
1/3 cup sugar
1 to 2 teaspoons lemon juice
Lime sherbet
Mint for garnish

Directions:
1)In a blender, puree the berries with the orange juice, sugar, and lemon juice, then strain the mixture into a bowl to remove the seeds.

2. For each serving, scoop sherbet into a chilled dish and spoon on some of the sauce. Then just add a sprig of mint for garnish.(optional)

And there you have it! A cool summer tasty treat for everyone in under 5 minuets. Enjoy!!

Heres a recipe I heard of thats really good that I decided to try: Get fresh fruit and chop it into 1 inch cubes. Next freeze it in freezer bags with just a little bit of water in it. Then in a couple of days toss the frozen cubes of fruit into the juicer or blender. You can mix a spoonful of honey into the mixture and drizzle another spoonful on top for a little extra sweetness. You can use all kinds of fruits- bananas, strawberries, apples, pineapples, kiwi, watermelon, etc.

My favorite summer treat is fruit, first and foremost! This is my favorite time of year to experiment trying new fruits.
I also like Turtle Mountain's Soy Delicious in peanut butter zigzag, Rice Dream ice cream pies, grilled vegetables, veggie kabobs, corn on the cob with Earth Balance, fruit spritzers, fresh carrot juice, PeTA's Kinesiology 101 salad and PBR Crispy Treats, spinach salad with Annie's Goddess dressing and any vegetable that is in season (corn, zucchini, avocados, eggplant, tomatoes, etc).

I love popsicles! They are so yummy and unless you get some fancy schmancy kind you don't have to worry whether their vegan or not. I also love making all-fruit smoothies. I usually just freeze my bananas and berries and add a little oj instead of milk. It's a great way to use browning bananas!

I haven't figured out how to make vegan ice cream yet so the recipe book would be a God send!!
My fave so far is a knock off of frozen bananas I had in my youth at Disneyland:

Peel a banana or two cut in half and insert popsicle sticks in the bottom freeze until firm.
Melt Ghiradelli semi sweet chocolate chips (yay for vegan items at Wal-mart!) and mix crushed peanut walnuts or pecans into the chocolate. Dip the frozen bananas and make sure they're covered. Return to freezer on some wax paper until the chocolate has hardened. Enjoy a delicious frozen vegan treat!!!

A vegan ice cream that is creamy, decadent, and doesn't taste like soy?
Here it is! This is the easiest and most delicious ice cream recipe you'll ever make. Seriously.

You'll need: a blender and an ice cream maker

Strawberry Ice Cream

* 1.5 cups raw cashews
* 1 cup maple syrup or sweetener equivalent - brown rice syrup, agave nectar, simple syrup...etc
* 16 oz fresh strawberries (frozen = ok)
* 0.5 cup water
* 1 teaspoon vanilla extract


1. Blend all ingredients in blender for about 2 minutes on high until very, very smooth.
Thickness should be similar to a thin pudding. Add more water bit by bit if needed.

2. Freeze according to ice cream maker's directions.

note: for extra specialness, save some strawberries from the original amount to chop and mix in at the end of the freeze cycle. Sweet!

A treat that reminds me its summer is frozen blueberries! Frozen blueberries taste kind of like sherbert and are just as good plus healthier! They are all natural and my parents usually grow them in our backyard so their super fresh! I also love Caramel Frappucinos from Starbucks on my way home from summer school.

I love fresh fruit, fruit smoothies, and Chocolate Silk soy milk (my energy drink for workouts), but most of all I love Purely Decadent vegan ice cream from Turtle Mountain! My favourite kinds are Cherry Nirvana and Mocha Almond Fudge, but I also like Praline Pecan and Peanut Butter Zig Zag! The SuperStore has a lot of different kinds of dairy-free ice-cream, but Purely Decadent tops them all...so much so that I even wish they carried more of the kinds they already do. It's so good that I often eat the whole container in one time, which makes me feel kind of sick...but in a good way! Try it and you'll know what I mean.

This one is a little out of the ordinary because it may not be ice cream, or even frozen. However, on those hot nights, it's so easy to just relax outside with friends and enjoy some fruit. It doesn't have to be a sugar fest to be dessert.
I have lactose and vegan friends, and also some that are using the summer as an opportunity to slim down by eating healthy, so this is something sweet everyone can enjoy. It's so delicious, and super duper easy to do. It's a favorite around the house.

Taffy Apple Dip:
* 8 oz. nondairy cream cheese (try Tofutti brand at Tofutti.com), softened
* 2 Tbsp. granulated sugar
* 3/4 cup firmly packed light or dark brown sugar
* 1 tbsp. vanilla extract
* 1 cup unsalted peanuts or walnuts, coarsely chopped
* 4-5 apples, sliced into wedges
* (You don't have to use apples, it's just a common choice. I've listed a few other choices at the bottom of the directions I've included below)

In a small bowl, mix together the nondairy cream cheese, sugars, and vanilla and stir until smooth. Then stir in the nuts. Cover and place in the refrigerator several hours or overnight for the flavors to develop. Serve the dip with the sliced apples or try pears, bananas, or pretzels.

one of my favourite vegan treats is a simple recipe i make often. all you need are peaches, dried dates, and your choice of berries. i find it tastes better with blueberries. you cut up the peaches and put them in the freezer along with the berries. once they are frozen, put the peaches and about 6 dates in a blender on high, until smooth and creamy. scoop it into a serving bowl and garnish with your choice of berries. bon appetit!

My favorite summer treat is my own special banana split.
I take superman ice cream, which is mixed with three different flavors, one of them being blue moon. I put a few scoops of that in a bowl, then i cut a banana in half and put the two slices in the bowl on each side. Then i put a few strawberry's in there as well. I also add a few walnuts. Then i put some choclate syrup and wip cream, and dont forget the cherry on top! (:

I love Purely Decadent ice cream. They all taste amazing and even the flavors you wouldn't think are vegan (like blueberry cheesecake) taste better than dairy ice cream. I also love mini soy ice cream sandwhiches and my own homemade cookies and muffins. They're not just healthier than typical storebought ones but they also taste amazing. :)

I LOVE making vegan icecream with my handy-dandy hand-cranked icecream maker. One of my faves is made with: Vanilla Silk soymilk, matcha tea powder and a bit of sugar. I mix it all together, put it in the icecream maker and mix (expectantly!)for about 20 to 30 minutes. Easy, cheap, delicious and VEGAN!!!! Who needs the Ice Cream Man? Leave the cows alone! :)

and then when it has cooked i quickly roll it and fill it with vegan vanilla ice-cream [homemade when we have the time] and fresh fruit [i normally use raspberries and strawberries] but Blueberries are a good superfood. (;

you then serve thick slices with a glass of ice cold diet coke. Mmm.

I grew up devouring homemade cookie after homemade cookie--Grandma’s (I can still remember her cookie jar), Mom’s (her chocolate chip cookies were phenomenal), Auntie’s (chocolate, chocolate, and more chocolate!), and the neighbor’s big platter of cookies that magically appeared every holiday season. Unfortunately, not one of these cookies was vegan! And growing up in a cookie-baking family, I naturally became a cookie maker/baker at a young age. Ahhhh, the cookies I made throughout my childhood and teens! Then I became a vegan…

-Total Disappointment-

Fifteen years ago, there wasn’t one single vegan cookie out there that didn’t resemble a baked disc of oatmeal! It didn’t matter whether the cookie came straight from a bakery, a single-serving package, or a package of 50-plus cookies! They were all total disappointments!

Then came the hours upon hours of vegan cookie recipes I tried--I hate to say it, but no matter how exact my measurements, how “golden” their color after baking, no matter how “gourmet” the ingredients I purchased, these cookies weren’t any better than those I’d bought in stores or elsewhere!

Honestly, out of frustration, I stopped baking cookies for a few years, and suffered through the occasional store-bought cookie experience just because I love cookies so much. But these “occasions” were few and far between, and always ended with me exclaiming in exasperation, “I could make cookies so much better than this!”

So my 2-year cookie-baking fast ended, and I plunged right into the “ocean of vegan cookie possibilities” (much to my husband’s dismay--I think we lived off of my cookie trials for a few years, and gained lots of weight to prove it).
Vegan Sugar Cookies
Oh what fun it is to make sugar cookies! These are an easy holiday treat to make with kids, and also a blast to make during a quiet afternoon alone.

They'll remind you of Grandma's house during a winter visit, or baking cookies in your childhood kitchen on a chilly day.

My Vegan Sugar Cookies are delicate, soft on the inside, yet have a crispy outside. These must be refrigerated for at least a few hours (even overnight) before rolling and cutting into shapes. You can't help but smile while making these cookies!

Ingredients

1 ½ cup Earth Balance Non-Hydrogenated Spread

2 cups vegan sugar (I used turbinado-coffee milled for a couple seconds for a finer grain)

2 tablespoons Ener G Egg Replacer

8 tablespoons water

1 teaspoon vanilla

5 cups flour

2 teaspoon baking powder

1 teaspoon salt

Preparation:

In a small bowl, combine egg replacer and water. Mix until frothy and kind of stiff. In medium-sized mixing bowl, cream together Earth Balance and sugar. Add egg replacer/water mixture and vanilla. Blend until well mixed. Slowly stir in flour, baking powder and salt. Mix until you have a thick and stiff dough. Place dough in covered container and refrigerate for a few hours, or overnight.

Once the dough is chilled, preheat oven to 350 degrees. Roll dough onto floured surface (I roll dough out between sheets of waxed paper) and cut into shapes. Bake on ungreased cookie sheet for 6-8 minutes. Makes approximately 3 dozen.

It's a great summer treat....mmm..mmm....good!

Vegan cupcakes from a vendor at all the festivals I go to! They seem to stalk me! haha

The cupcakes are soo delicious and are works of art!
I even convinced my best friend to go vegan purely on these cupcakes.

Lick-it-t split

5 Scoops of vegan Ice cream
2 Cups of crubled vegan cookies
1/2 Cup of choped nuts
1 Whole banana
2 Cups of fruits
1 small plain cake
a little bit of carmel

Time to get messy!

so first you need a big bowl and you have to be willing to share this vegan goodness with a friend.
Ok do you got your bowl and igredients above?
then lets begin.

Step one: nothing is the same with out cake

get your bowl cake and ice cream ready. put down the cake then the ice cream all into the bowl.... (it tastes alot better with more then one flavor)

Step two: Frozen fruit o rama

chop up your banana and other fruits then place it around the ice cream and cake

Step three: crazy carmel

cover the whole thing with as much carmel as desiered. If you want to make it vegetarian then bring on the chocolate.

Step four: The big crunch!

Now it is time for the cookies and nuts. Use these as the replacement for the ice cream shop sprinkles. This will make it all the good.

Step five: The big decision.

So are you going to share this yummy snack with a friend or sneak it into your room and eat it alone wishing for more?

In my country summers are hot and winters are really cold. So, as a sweets lover, I used to do delicious vegan cupcakes in winter. Now, it's summer time, so I take some strawberries, soy milk and treating myself good.

Cantaloupe Pops!

Prep Time: 15 minutes

Ingredients:

* 6 oz. can frozen fruit juice concentrate (I like pink lemonade)
* 3 cups cubed cantaloupe or other melon
* 3/4 cup water
* 10 paper drink cups
* 10 wooden popsicle sticks

Preparation:
In blender or food processor, combine fruit juice concentrate and cantaloupe and process until smooth. Fill each drink cup with about 1/3 cup of this mixture, then freeze until partially frozen, about 1 hour. Insert wooden sticks and freeze until firm. To serve, peel away the paper cup. 10 pops

One of my favorites treats is a really simple and healthy smoothie. It's just 1 avocado, 1 apple, and 1/4 cup of water blended smooth. You can add some agave nectar for sweetness. This treat is refreshing on a hot summer day, and totally guilt free.

My favorite summer treat is a Purely Decadent Coconut Craze hot fudge sundae. This consists of Coconut Craze vegan ice "cream", which has coconut, almonds, and chocolate chunks in it, topped with vegan hot fudge, and more chopped almonds and shredded coconut. This is incredibly delicious, and refreshing! My sister and I came up with this one together. We usually share it, because we love whales, but don't want to look like them.

I like anything frozen for the summer. I take fresh fruit juice could be any kind, apple, raspberry,orange. Freeze them in little cups,while putting the accomodating fruit at the bottom of the cup freeze and pesto Yummy homemade ice pops.

My fav fav, is bubble tea and you can make your own as well, but with juice. You don't have to use tapioca balls at the bottom either you can use those wild blueberries they come dried, if you soak them a lil they are just as good!! Than you can make a blueberry bubble tea.

2 Cups Of Ice cream.

You simple boil the water for jello, mix in powder, whisk in ice cream, and then set in fridge like reg. jello!

It's yummy! And so simple!

I am a simple gal who takes what is simply offered naturally. So, my favorite summer treat includes all the fresh fruit varieties I can find in my farmers market including, plump and juicy cherries, grapes, blackberries, strawberries, blueberries, watermelod, cantelope, honeydew melon, papaya, and some apple for crunch. With these super fruits I make a super fruit salad and let all the juices flow to flavor the mix. If you want, you can add your favorit dairy free whipped topping or nuts to the mix for a little protein. Enjoy a floridian treat.

Green Tea Ice Cream Tempura

Ingredients:
1 Baseball-sized scoop of Green Tea Ice Cream (or any other favorite flavor of vegan ice cream)
2 Medium slices of vegan friendly Pound Cake
1 Batch of Tempura Batter
1 Deep Fryer

Take scoop of Ice Cream and cover it with the pound cake so its evenly covered by a thin layer.

Place cake covered Ice Cream in the freezer while you prepare the Tempura Batter and warm up the Deep Fryer.

When both are ready, dip cake covered Ice Cream into the Tempura Batter and then place in the Deep Fryer for about a minute or until the outside is a nice golden brown color.

Garnish with favorite toppings or leave as is.

Serve Immediately.

Me and my best friend set aside at least one day during the summer when we make pina coladas. It's been kind of a tradition for us for the past few summers. We gather up some money, go to the store, and buy pineapple juice, cream of coconut, and a jar of Marciano cherries. Then we just blend up the pineapple juice, coconut cream, and ice. Then we top them with as many cherries as we want and some of the juice from the cherry jar and drink to our heart's desires. During that time we pretty much just talk and hang out. It's the one time when we aren't allowed to worry about how many calories we're drinking or anything like that, during that time it's all about two best friends just being together.

My favorite ice cream treat is pretty simple. Soy Dream vanilla ice cream on top of a warm homemade vegan brownie. Oh yeah, I also love Temptations cookie dough ice cream. They're a vegan ice cream company, too. Oh, and they also have coffee flavor. Oh their vanilla is great between homemade chocolate chip cookies for a giant vegan chocolate chipper. Yum! I guess I can't choose just one favorite.

Ever since I went vegan, I've been missing one thing: choco tacos. And this summer I've been meaning to make them, and the recipes are simple, and you can find them all online. All you need to do is make a vegan waffle cone (google!), melt some vegan dark chocolate, and get some delicious soy ice cream, and put them together, and freeze until they are solid. It's fool proof, I just haven't had time to do it yet :(

-1/2 cup of chocolate Living Harvest hemp milk (my favorite brand and the best for this in my own opinion)
-1 frozen banana
-1 spoonful of peanut butter
Throw all ingredients in a blender.

My absolute favourite summer treat is homemade sherbert! Of course, it's made with soy milk. :D
I get frozen fruits, strawberries for example, grind them to slush and mix it with the soy milk, put it in the freezer, and voila, got my homemade sherbert! And it freezes pretty fast too, I never need to wait long. :D
It tastes so good, like store bought ones, except it's better. :P

Summer to me is about the simple things. Taking time to walk barefoot through the grass, being sure you spend at least one afternoon at the beach with a good book and, of course, the food! There's nothing like a veggie burger cooked on the grill. Melt a slice of Rice brand American cheese on top and you'll be in vegan heaven.

For dessert? The ultimate summertime treat is a slice of fresh watermelon. Anyone can make that!

For the more adventurous, I'd recommend a slice of vegan apple pie topped with a scoop of soycream. Check the book "Lick It" for soycream recipies! For the apple pie, here is a great recipe:


VEGAN APPLE PIE
Ingredients
6 large apples, peeled,cored,and sliced
1/2 cup raisins (optional)
3/4 cup maple syrup
1-2 teaspoon lemon juice
2 teaspoons cinnamon
2 1/2 tablespoons cornstarch or arrowroot
1 pie crust
1-2 tablespoon whole wheat flour (this thickens up the filling)

Directions
1 Preheat oven to 350.
2 Prepare apples.
3 Boil water in a large pot. Add apples and raisins.
4 Turn down heat to medium and simmer apples and raisins for 10 minutes or until soft.
5 Save 1/4 cup of water used for cooking apples for later use.
6 Drain apples and place in large bowl.
7 Mix apples with maple syrup, cinnamon, and lemon juice.
8 Set aside.
9 In a saucepan, add "applewater" and corn starch.
10 Stir continuously until mixture is thick, then add to apple mix.
11 Lastly, add whole wheat flour to mixture.
12 Stir well and carefully.
13 Pour final mixture into the pie crust and bake on 350 for 30 minutes, or until brown.

I've been so frustrated with the lack of vegan dessert offering where I live that I've been experimenting, trying to make my own vegan icecream. I'm so thrilled to know there is a book like this. I would love it!!

I love having avacodos.
The best way i like to eat them is when you carve out the insides into a bowl, of course take out the pit and skin, and you have to mash it up. Then put in a couple of ice cubes to chill it up. Add some condenced milk, or splenda works well,to make it creamy and sweet, Then your done! :D
It's creamy and really sweet, plus it's cold which makes it better for the summer!It's a great substitue for ice cream too!

This summer I have been especially fond of cookies and ice cream! So my favorite treat would have to be a big scoop of french vanilla soy ice cream in a bowl with broken cookies on top - usually oreos or chocolate chip. I scoop the ice cream in the bowl, break the cookies over on top, then stick it in the freezer for about an hour so it's all nice and cool - delicious!

My favorite summer treat is Coconut Ice Shavings. Since I was a child I've been having this every summer. My grandmother would make it at home and place it in glass baby food containers, I follow the tradition. The tastiest treat ever. Made with coconut milk. Just perfect. We are a dairy free family and my kids love Ice cream. They need a serving a day during the summer. I'd love to expand my repertoire from coconut and ices. Thanks for the chance.

My favourite vegan summer treat is homemade smoothie ice-lollies. You just chuck your favourite fruits into a blender with some juice (or with soya milk and yogurt if you prefer), whiz it all up and pour into lolly moulds before freezing. If you can't wait then you could have a glass of the smoothie to drink!

I would definatly have to go for a bananna split ( a banna,nuts,chacolate and vinnela ice cream, and whip cream , and cherries ! ) and a peice of watermelon :) yummy !!! (all vegen)

not exactly ice cream, but i LOVE italian ice, the first time i had it i couldnt believe it was vegan, and i actually gave it all to my lacto sister cause i thought it was suspiciously creamy. ahh, strawberry and lemon together are super sinful theyre so yummy. but, when italian ice cannot be found, homemade strawberry ice "cream" is pretty damn good too

you can alwys buy ice cream that is made with soy milk. it tastes just like any other ice cream and you just put what ever you want on it its really good.

My perfect summer meal consists of quite a few things!
First, I would want an ice cold, refreshing glass of lemonade with one of those cute little umbrellas and a bendy straw in it. Next, watermelon slices! Nice, juicy, sweet watermelon slices that make your mouth water. Make sure it's organic!

a frozen mango with a stick stuck at the bottom so you can hold it like a ice cream.
it taste really good and its not bad for you.
