Happy Vegan Passover! April 9, 2009

Some of us in peta2 are kind of (completely) obsessed with vegan Passover recipes. If your family celebrates Passover, there's not a better way to explain why the universal story of dignity, hope, and freedom should apply to all beings—including animals—than by celebrating compassion with delicious vegan food!

If you're clueless in the kitchen like me, no fear! Check out VegCooking's guide to a vegan Passover here! My favorite is the eggplant casserole!

Eggplant Casserole

1 large onion, chopped
3 Tbsp. oil
1 medium eggplant, peeled and cubed
1/4 cup diced green pepper
11 oz. tomato-mushroom sauce
1 tsp. salt
1/2 tsp. pepper
2 large tomatoes, diced
1 1/2 cups matzo farfel

- Saute the onions in oil until tender. Combine onions, eggplant, green pepper, tomato-mushroom sauce, and seasoning. Cook, covered, for 15 minutes or until eggplant is tender. Stir in tomatoes. In a 2-quart baking dish, arrange in alternate layers the vegetables and matzo farfel. Begin and end with the vegetables.
- Bake at 350 °F (uncovered) for 25 minutes.

You can truly prove to your family that there's a vegan alternative to anything! There's even a vegan gefilte-fish recipe!
