Cupcakes are one of my favorite things. They are also one of the things I was worried I would have to give up when I went vegan. If only my inexperienced vegetarian self had known that vegan cupcakes taste BETTER than regular cupcakes and are super easy to make!
For those of you that live in New Jersey or New York City (or near there) then you need to go to Cupcakefest on Saturday, June 21st. It's a day filled with vegan mini cupcakes, giveaways, and music by Junkpunch, And Then There Were Machines, Thing One, Brian Keith, and Kieran Hobler. The event is being presented by one of the most amazing vegan bakeries in Jersey: Sweet Avenue Bake Shop. Plus, it's free! So if you're in the area you have no excuse not to go.
For those of you that don't live in places where vegan cupcakes are commonplace then you need to pick up this book. Maybe you can start the first ever vegan bakery in your town!

To get you inspired to eat and bake cupcakes we're giving away one dozen cupcakes of your choice (roll over the names for picture and description) from Sweet Avenue Bake Shop and a copy of Vegan Cupcakes Take Over the World to one lucky winner!
To win, comment below with the vegan cupcake flavor you want to create AND if you'll be attending Cupcakefest! Mine would be "Peppermint Stick" which would be a vanilla cupcake with peppermint frosting (and a peppermint stick coming out of the top)! And, sadly, I will be in Virginia during Cupcakefest.
This contest ends June 27, 2008 and the winner will be chosen and notified by July 3, 2008!

hmmm... a lemon lime vegan cupcake would be awesome to create with the actual cupcake to taste something like mountain dew and the frosting to take lemony lime with little green and yellow sprinkles or slices of lemon or lime to top it off =]

My cupcake would be called "Double Trouble" which would have a vanilla cupcake at the bottom with a chocolate cupcake sat on top of it! The perfect cupcake for people who can't eat just one!!
I'm in the UK so it's a little bit too far to go for me to attend Cupcakefest!
p.s. If I win I know that cupcakes probably won't travel very well so I'd be happy with just the recipe book! :o)

And if I got the book I would give it to my friend who loves to bake. She's not vegan and she always says she wants to make me vegan cupcakes and this would help her tremendously! Maybe this would help her become vegan. We can always hope!

my flava would be like a carrot cake so carrot cupcake with vanilla creme vegan frosting. YUMMMM!
I have a couple ideas, lemon lavender cupcake which is a lemon cupcake and lavender (like the flower) infused icing. mmm A Hazelnut cupcake light chocolate cupcake with nutella like ganache on top maybe with a couple hazelnut crunches as a garnish. or a caramel pineapple mousse cupcake. White or yellow cupcake filled with caramel topped with caramel pinapple whipped cream mousse!! so yummy!!

It will have a pinkish color with a soft fluffy texture and on top will be a off-white creamish icing with red strawberry flavored dizzle on top of that and a small slice of strawberry that sits in the middle. That sounds sooo good right now. Lol.

My cupcake would be called "orange dream". It would be a very orange flavored cupcake with a vanilla/orange swirled buttercream...D-licious! Unfortunately, I am unable to attend…I live in Texas.

I think strawberry slice cupcakes sound delicious, pink strawberry cake with uber-fluffy strawberry frosting with a huge strawberry dipped in chocolate sitting oh so pretty on top! YUM! My creation would be Bananarama, which would be a vanilla cupcake, with a peanut butter/banana stuffing, and peanut butter frosting with a banana on top.

That would be so great! It would probably be the first cupcake that can be dipped into delicious cold soy milk....that's my prespective of a better world.
I would love to have that book, it would be great to have when baking goodie vegan treats for my friends on their birthdays.

I would totally make the cappuccino cakes filled with espresso creme! I love coffee and i love cupcakes... together they are bliss! And sadly no I will not be able to attend the festival because I too will be in VA that day.

I live in Kentucky (which means no on the Cupcakefest), and we have ZERO vegan shops. I'd love the cookbook so I could make good desserts and what-not that my friends, family, and myself could enjoy!

another idea would be a vegan version of my grandma's "better-than-robert-redford cake." it's vanilla cake with a layer of crushed pineapple, bananas, and strawberries, covered with whipped cream then sprinkled with shaved coconut. it's light and fruity, but so sweet.
cupcakefest is the day before my birthday. i'll be there and i expect everyone to give me a birthday hug :-D
