It's finally happening! peta2 is working on a brand-new vegan cookbook, specifically focusing on SIMPLE, and EASY recipes. Here's where you come in! We're looking for creative and delicious vegan recipes that we can use in the book!

Pancake in a Mug

1/2 cup Bisquick
1/4 cup Soymilk
Vegan Butter/Margarine
Maple Syrup

1) Mix Soymilk and Bisquick together in a mug
2) Microwave for about 1 1/2 minutes
3) Add vegan butter and maple syrup
4) Enjoy!

Stuffed spaghetti squash.... its the BEST!!

all you need is your squash, a package of veggie ground round (or whatever fake meat you wanna try), small jar of salsa, some sort of tomato sauce (its better if its a jar of pasta sauce with spices and stuff), some peppers, mushrooms, onion, whatever other veggies you want in there and if you want, cheese.

-cut the squash in half lengthwise, get rid of all the seeds and mushy stuff (it's just like a pumpkin) and either microwave it or put it in the oven at 350 until the squash has softened.
-cook veggie ground round, veggies, salsa (the entire small jar), about 1 cup of the pasta sauce, and any spices you like (i like chilli and garlic powder) in a wok at medium heat for approx 15 minutes or until desired heat is reached.
-Fill the 2 halves of squash with the veggie ground round mixture.
-i always top my boyfriends half with some grated chedder cheese too but it's good either way.
pop it back in the oven at 350 and cook for about 15 minutes.

its the easiest meal ever and its great for when you have meat eating guests because you can make half with meat and cheese, although i usually make everyone try the veggie ground round anyway.
