Cookbook Contest for Hungry Banditos! October 9, 2007
Posted by Lara Sanders | Permalink | Comments ( 6 ) | TrackBackHot Damn and Hell Yeah: Recipes for Hungry Banditos/The Dirty South Vegan Cookbook is the best cookbook I have laid eyes on since Vegan Cupcakes Take Over the World! With recipes like Southern Fried Tofu and Party in Your Mouth Cake, can you really argue with me?
Actually, it is a split of two cookbooks (double the fun): Hot Damn and Hell Yeah: Recipes for Hungry Banditos is by Ryan Splint and The Dirty South Vegan Cookbook is by Vanessa Doe. Thank goodness those two got together for the very important mission of getting the word out about the wonderful world of Southern vegan cuisine.
Recently, PETA's road warrior Lindsay tried out some of the mouth-watering recipes in the cookbook. Here is a pic of the cooking process...
And here are the results!
Hungry? I am! If Lindsay didn't live all the way in Louisville, KY, I would try to steal those biscuits from her. Fortunately for you, you don't have to resort to such measures—we are giving away two copies of the cookbook right here!
All you have to do for a chance to win is leave a comment below with your favorite vegan recipe!
The contest ends on October 30th, and the winner will be notified by November 6th.
xoxo,
Lara

Personally one of my favorite vegan recipes is vegan spagetti with soy meat sauce.
Ingredients:half a pack of Lite Life regular soy ground beef wich can be found in the fresh produce section of the grocery store.You also need a cup of little broccoli florets, half of a yellow onion, a small zuccini or squash,a small package of spagetti noodles, 2 tblsps. vegan butter, and a jar vegan tomato sauce
Instructions:first chop up all of your vegetables. Then start to boil a pot of water for your noodles. After you do that pour your tomato sauce into a small sauce pan and set to simmer. Also set another small pot of water to bowl for your broccoli.After the water is bowling put your noodles in one and your broccoli in the other and wait until your noodles are soft and your broccoli is a little bit soft.Next get a medium pan and put the broccoli, the rest of the vegetables, and the butter in and set to medium.While the veggies are cooking drain you noodles and put them into a big bowl and pour the sauce over.After this put your soy meat in a bowl and heat in the microwave for 1 minute, be careful not to burn it. Finally once the veggies are all soft and cooked mix them and the soy meat into the noodles and dig into a bowl of yummy deliciousness

1 cup oil
2 cups sugar
1 cup grated carrots, packed
1 cup crushed pineapple, drained
3 cups flour
1 tsp salt
1 tsp baking soda
1 tsp baking powder
1 tsp cinnamon
1/2 cup diced walnuts
1/2 cup raisins
1/2 cup applesauce
1 tbs cornstarch mixed with 1 tbs water
peach marmalade(optional)
Mix it all together, put into a greased pan, and bake at 350 until cooked through. After it is cooled, you can spread peach marmalade on top to make it extra tasty.

Ingredients:
-Vegan Tortillas (La Tortilla Factory, Leona's, or BuenaVida)
-White Mushrooms
-Russet Potatoes
-Lettuce
-Tomato
-Olive Oil
-Black Pepper
Instructions:
First you have to peel the potatoes and cut the into one inch cubes. Then boil the potatoes until they are soft. Next put the potatoes in a medium size frying pan on medium heat with a 1 tbsp of olive oil. Make sure to flip the potatoes over quite often so that they cook on all sides. While the potatoes are cooking, wash the mushrooms and slice them. Remember that for every one potato you're making, you'll need about 4 mushrooms. Also while the potatoes are cooking you can preheat your oven to 250 degrees. Once the potatoes are a little crispy, set them aside on a plate and throw in the mushrooms. Also, put your tortillas in the oven for about 3 minutes. Add a little more olive oil if the pan is dry, but not too much, you don't want the mushrooms to soak up the flavor of the oil. It won't take long for the mushrooms to cook to a nice golden brown. Turn your stove off and throw your potatoes in the pan with the mushrooms. Now you can add the black pepper and any other seasonings you think might taste good. Maybe a little chili powder for some kick!
Once your tortillas are warm, you can load them up with the potatoes, mushrooms, lettuce, tomatoes, and maybe some vegan cheese!
This also goes really good with some homemade tomato salsa.
Total cooking time: 25 minutes.

Posted by: Chellie at October 16, 2007 4:24 PMOK, so maybe this is a lame entry for "favorite vegan recipe" - since it's just a simple cookie recipe and all - but it's by far the best chocolate chip cookie recipe I've ever tried. And I've tried A LOT of 'em.
-----------------
Chewy Chocolate Chip Cookies
Makes 25 to 30 cookies
* 1 cup of softened soy margarine
* 1/2 cup brown sugar
* 1/2 cup sugar
* 1/4 cup soy milk
* 1 teaspoon vanilla
* 2 1/4 cups flour
* 1/2 teaspoon salt
* 1 teaspoon baking soda
* 12 ounces dairy-free chocolate chips
Preheat the oven to 350 F.
In a large bowl, mix the margarine, sugar, and brown sugar until it’s light and fluffy. Slowly stir in the soy milk then add the vanilla to make a creamy mixture.
In a separate bowl, combine the flour, salt, and baking soda. Add this dry mixture to the creamy mixture and stir well. Then fold in the chocolate chips.
Drop small spoonfuls onto non-stick cookie sheets and bake for 8 to 10 minutes.

I've got pics of an X-Mas batch here, in case anyone wants to bask in the chocolaty goodness!
